Here's my experiences:
Last year I installed the 375/77 torsions along with the 225lb front.Even after a few hundred miles of break-in they were just too stiff for my 210-ish rider weight... even with gas on the tunnel.
This year I went with the 359/47 torsions as well as doing the RTA relocation. This has been perfect for me, no more dead spot in the upper travel, ideal sag, a good balance of bump soaking and weight transfer. Still on the softest torsion block setting.
